Because our lambs are allowed to grow slowly to maturity (typically 6-9 months) compared to an average 3-month-old supermarket lamb they will require longer and lower cooking times.
Between 1 and 2 years of age they are known as hogget, and are a delicious cross between tender lamb and full-flavoured mutton.
The pork in our boxes can be anything from 4 months to 10 months old. The younger smaller animals called ‘Porkers’ are for joints etc. whilst the older larger animals known as ‘Baconers’ are just as described! In the middle you have the ‘Cutters’ that give us larger joints. Due to the leanness of our pork thanks to its active life we are able to aim for around 8 months to maximise quality pork without excess fat.

Weights where shown are approximate. We work on the basis of 250g/person/serving.
Our large boxes contain larger joints aimed at 4 person with extra quanities of the other items. The small boxes have smaller 2 person joints.
Chops and Belly slices are thick-sliced to make the most of the lean and tender meat of our well-exercised woodland pigs.
Our peak availability is around Summer/Autumn every year with some items available all year around.
We will always do our best to ensure that each box is as described but may on occasions need to make substitutions.
We are able to delivery boxes if geographically suitable!

Experience says that a half a pig will take up approximately 26l (litres) once prepared by our butcher. This means in a small under counter Freezer (50l 3/4 drawers) the meat will take up a couple of drawers. In a larger stand-up or chest freezer (150l+) you could find that the meat takes up a single drawer or less.
Lamb is a bit more compact with half taking up no more than one drawer in a stand up freezer.
